I've tried various combination of settings for both the ENCODER_PULSES_PER_STEP and ENCODER_STEPS_PER_MENU_ITEM but unfortunately, I've had no luck :(
Seems the setting of the click encoder

#define ENCODER_PULSES_PER_STEP 1

//#define ENCODER_STEPS_PER_MENU_ITEM 5

is the only one where I have the ability to select menu items.
