I'm surprised you're not getting a divide by 0 error on the change you made to the z safe homing points. If you don't want it to go to the center when homing z, comment out Z_SAFE_HOMING.
Travel limits: leave the min at zero and set the max to your bed size and how far up your z can go. The current settings you show are fine for a 200x200 bed and a max z height of 200.
Offsets for the z probe: since the z probe isn't the nozzle, you set these to how far away on the X & Y the probe is from the nozzle and the z offset is the distance the nozzle is from the bed when the probe triggers. The X & Y offsets don't have to be exact, just be within a millimeter or two. The Z offset must be accurate for the first layer to be printed properly.
