For mesh leveling, basically you just enable it. Enable MANUAL_BED_LEVELING too, so you can run the procedure from the LCD. I also use MIN_Z_HEIGHT_FOR_HOMING to ensure no crashing into the bed clips. Marlin 1.1.0-RC6 is the better choice for Manual Bed Leveling, because it got a lot of improvements with that update. The current RCBugFix might have a couple more tweaks. The next pre-release (RC7) is most likely going to end up being the release version of 1.1.0, so this is a good time to try it out.
